Žampera s Dugog otoka u konkurenciji za najbolji OPG Hrvatske

I ove godine Večernji list i Ministarstvo poljoprivrede, u suradnji s HRT-om, biraju najbolje obiteljsko poljoprivredno gospodarstvo.
Ovoga mjeseca rujnu će se održati završna svečanost dodjele nagrada Zlata vrijedan na Poljoprivrednom gospodarstvu Skelin u Drinovcima.

U konkurenciji 21. gospodarstva našao se OPG Žampera s Dugog otoka.

80 koza, Dugi otok, mjesto Žman… I jedna sasvim moderna pastirica. Ove koze, njemačke šarene, u nas poznate i kao srnaste, dobro znaju proceduru. Radni dan ovdje počinje u 5 sati. To je vrijeme za mužnju. I za otprilike dva sata pomuzeno je svih 80-ak koza. Katica Žampera kaže da koze vole doći na izmuzište na kojem ih se uvijek nagradi hranom. Nakon mužnje slijedi ispaša. Pronaći slasni zalogaj za svaku je kozu pravi izazov. A za njihovu pastiricu posao na kojemu svakodnevno provede ljeti 4, a zimi čak 6 sati. Puno hoda, i uvijek je na oprezu, no koji puta Katica uz koze stigne i čitati.

I dok ona motri koze na ispaši, Nikica s kantama mlijeka hita u siranu. Važno je početi praviti sir od što svježijeg mlijeka. No ipak bar na kratko treba pozdraviti Lisu i Viskija, konje na OPG-u Žampera. Od velike je pomoći Petra, inače studentica pete godine agronomije. Obiteljsku tradiciju  svakako namjerava nastaviti. Zadovoljna je kvalitetom sira, uostalom govore to i brojna priznanja.

U OPG-u Žampera rade se tri vrste kozjega sira. Od pasteriziranog i svježeg mlijeka te kuhanog. I oko sira brine se Katice, jer sir se mora njegovati. Mora se okrenuti jednom dnevno. Prebrisati ga treba malo, ako ima plijesni i eventualno premazati uljem da dobije vlažnost.


Obitelj Žampera poljoprivredom se počela baviti prije više od 20 godina. Počeci su bili teški, no danas su bez lažne skromnosti zadovoljni. Fizički nije teško, kaže Nikica, jer danas je sve tehnika. No, treba odvojiti dovoljno vremena svaki dan. A nije im teško.


Samo da je zdravlja, kažu Žampere, bit će i kvalitetnih, domaćih proizvoda iz Žmana, malog mjesta na Dugom otoku.
